The reason for our success in value adding through the processing and hot smoking is the recipe we use to prepare the salmon. “It is an old European recipe with a blend of sugar, salt, herbs, spices giving it a unique flavour.” (scroll down for online order form or have a look at our brochure)
41° south salmon after being taken out it is straight away cured for a day in a natural brine solution which includes 12 selected herbs and spices. It is then slowly hot-smoked at a high temperature thus creating a moist flaky texture combined with an exceptionally delicate smoked flavour and an after taste on the palate that will be memorable. Once the fish have been hot smoked, and after cooling down, each fish or fillet will be vacuum packed in pouches. The products have been tested for a shelf life of 6 weeks, or can be kept longer if frozen.
We also produce a smoked salmon rillettes, which includes 50% of our hot-smoked salmon and butter, yogurt, herbs spices and Tasmanian mountain pepper.
Rillettes is French for potted meat (ree-yeht): Meat, usually pork but also rabbit, goose, poultry, fish, etc., that is slowly cooked in seasoned fat and then pounded or pulverized (along with some of the fat) into a paste. This mixture (also called potted meats) is then packed in small pots, or other containers. Rillettes can be stored for several weeks in the refrigerator providing is not broken. This mixture, resembling a coarse paste, is served cold, usually as an appetizer spread on toast or bread.
